The seven
- Negro — dark, deep, faintly chocolatey
- Rojo — rich and earthy
- Coloradito — brick-red and slightly sweet
- Amarillo — golden, often with masa
- Verde — fresh, herbaceous
- Chichilo — smoky and rare
- Manchamanteles — fruity, “tablecloth-stainer”
